To curb costs in our out-of-town AYCE sushi joint, you have to eat everything you order. "Everything" includes the rice balls that come with your nigiri. And if you don't, they charge you. From a business perspective, it makes good sense -- I mean cents -- so you don't bite off more than you can chew. (Puns intended.) They don't do that at Ginza, which is why we noticed tables cleared with so much waste. It adds to rising prices, passed on to the consumer. Lunch costs more than advertised, though still a deal at less than $20. Curiously, before ordering, you're asked what kind of sauce you want. I'm used to soy sauce -- already on the table -- wasabi and pickled ginger. "Beats me," I said. "Whatever you think." So she brought everything. The menu differentiates raw fish from cooked. I like that! Our tried-and-true strategy is to forego appetizers, salads, tempuras, hibachi and zero-in on the good stuff. Sushi. Once we've had our fill of fish, if there's room in our bellies we explore the menu. Without detailing our order -- see my photos -- I'll recommend their white tuna nigiri. It's as light and delicate as we hoped it would be. All the fish was good, and everything appeared fresh. The menu lists rolls, some pretty innovative, I'd never seen before. I think their ordering process could be streamlined by providing checklists to indicate what you'd like. Nonetheless, with a couple of minor mistakes, our server got it right, and lunch today was a good experience.
