The Dabney Cellar Washington Reviews from The Last Year
Disappointing Dabney
My husband and I recently celebrated our anniversary at The Dabney. Unfortunately, we found it to be a very disappointing experience. The level of cooking was variable. While there were some excellent dishes (or parts of dishes), most were just good and some were quite lacking. In addition, the sauces were redundant, with beets and rhubarb appearing in two or three dishes each (one of which was a snack). The beet sauce on the foie gras was too sweet, though the foie gras stood up to it. The wagyu small plate also stood up to the sauce, but it completely overpowered the sweetbreads which were over-cooked and tough. I tasted that dish, left it otherwise uneaten, and interestingly no server thought to ask about that. (I have eaten sweetbreads before and loved them.) The sliced duck was excellent and the duck confit was terrific; I wish the serving of the confit had been larger than a square inch. The duck legs, however, were covered with another overly sweet sauce, this time rhubarb. I attempted to scrape it off but ultimately wiped it off with the washcloth provided. Underneath the sauce, the legs were overdone, dry and tasteless. The refresher course was nice, but, again, rhubarb. The sorghum cake with apple butter was, frankly, awful. It was heavy and the sorghum totally overpowered any apple butter flavor. In addition, the tempo of the meal was very dragged out. The 4 snacks, while considered one course, are presented individually, roughly 10-15 minutes apart (I didn't time this; it is an estimate). That means that for approximately 40 minutes, we were drinking wine with only 4 bites of food, as no bread is served. It would be better to present all 4 together, both for timing and also for comfort. We were in the restaurant for 2 hours and 45 minutes and frankly we were glad to leave. This was not a festive experience. That brings me to value. This was a big anniversary for us, our 45th. We were aware of the cost and we were fully prepared to spend it. However, we weren't prepared for a meal that cost $850 ($185 for a mediocre wine that was among the less expensive on the list!) to be less than exceptional. This was not even close to exceptional. The dishes were inconsistent and in my opinion the repetition of ingredients represents a failure of imagination. That there are so many other restaurants in DC that routinely serve exceptional food, are more enjoyable and cost significantly less makes this experience that much more jarring.
Wife’s 35th Bday Dinner
I would like to think we all like to spoil our significant others for their Birthdays-I took my wife to dinner at The Dabney and we were amazed by the 8 course dinner and classic wine pairing. Every single employee was helpful from the moment we walked in the door. They were on top of their game and made this experience hard to beat in the “best restaurant meal/experiences” we have had to date or will have in the future. The Manager on Duty was extremely helpful in discussing the food and wine, the kitchen staff were exceptional, numerous servers took care of us-my receipt says Nicolette was “ours”. I can’t say enough for this place and how much I enjoyed their dedication to sourcing the best ingredients and trying to keep the farms and purveyors within a small radius of the restaurant. My favorite item on the dinner was the course of the “sugar toads”-iykyk. Thanks again Dabney Crew!!
Slow and pretentious - star payment but not star food
Slow and pretentious - some excellent dishes but others much less so. Over three hours - ie, a bit less than 3 courses an hour - yet, several courses needed little preparation at the time of serving. Best by far the main duck course - well conceived and executed. Wine "pairing" was frankly a wine tasting - 5 mildly interesting wines in ungenerous pours that added up to one single glass of wine (at $125?). Perhaps deserves a good rating but not a star for sure - although the price was for the star, not the food or ambience - and well below the standards of other one-star places.
Slow
Service was friendly but slow. Drinks took ages and the bar was not crowded. Martini was not great. Food took a while too. Food was good but small portions. Prices were too high for such small portions. Overall not awful but not exceptional.
Worth the Money if you're used to spending it like this
The Dabney is one of a kind and we're happy we dined there. Having said that, I'm not sure any restaurant is worth $250 pp (before tip) but that could be because I'm just not used to spending that much. I love tasting menus and that is what The Dabney offers. The service was perfect. I had one of the best cocktails of my life - Called Man on a Wire. The food was wonderful except for one sausage course (but then I'm not a big sausage fan). The restaurant is a bit hidden so it was wierd for us to walk around a dark parking lot and down a little alley. Could be our Uber driver just didn't know where to let us out.
Perfection in the District
One could start by highlighting the incredible flavors in the dishes - or the delicious cocktails crafted with local spirits, or the chic ambiance of the bricked space with the open kitchen - all world class - but the highlight is the exceptional service. Attentive, patient, practiced yet authentic- the DABNEY delivers. From the bartender creating an off the menu cocktail to meet tastes (which was incredible) or the presentation of oysters farmed by a former DABNEY alum, this is by far the best dining experience in DC. Cannot recommend strongly enough.
Such a good dinner!
We were so excited to get a reservation at The Dabney. We were seated just a table from the counter where the chef worked and it was perfect. The night we went the focus was on a local pork farmer and seasonal crab. Each course was delicious. I could have done without the scrapple course but that is a personal preference. The staff was all kind and knowledgeable. We will defiantly return. The sommelier was so knowledgeable and listened to what we liked and picked wonderful choice for each of us. We will return!
Jumping the Shark
The Dabney, this year’s Washingtonian Magazine pick as the #1 DC restaurant is richly deserved. We had eaten there five times in the last few years as a couple and with friends and had always left elated. Not last night. We hadn’t eaten at The Dabney in over a year. Much has changed. The dining room has been remodeled and so has the menu. What used to be an à la carte menu is now a six-course tasting menu priced at an attention-getting $185. I do not eat seafood. My wife does not eat red meat. She is not a demanding diner. As long as the ingredients and fresh and well-prepared, she is satisfied. And, to be sure, that’s a low bar. But in my experience, the new price point demands something more. The Dabney’s attempt to accommodate my pisciphobia fell far short. Four miniature cucumber spears in a benign, if enthusiastically hyped, tartar source does not rise to the level of fine dining. Each course was well prepared, apparently highlighting the current locavore trend, but sacrificing anything close to the “wow” factor we had come to expect from The Dabney. When the tuxedoed manager asked us how the meal was going, I told the truth, expressing my disappointment in no uncertain terms. As a “gift” from him, I had a course of four beautiful lamb chops with an unusual sauce the composition of which eludes me.. I appreciated the gesture, and the combination WAS unusual, but less than stunning. Chef Langhorne has become THE rockstar chef of DC. Even early on a Wednesday night, the place was noisy and packed, so I am in a minority. But still, my wife’s disappointment with the mere adequacy of most of her meal only redoubled my own at the embarrassingly feeble attempt to accommodate my dietary preferences. There are several area restaurants that I leave reliably elated by the experience. The Dabney used to be one of them. To a degree, I’m the victim of my own heightened expectations, but, my God, how the mighty have fallen! In its current incarnation, The Dabney is clearly a “special occasion” restaurant. And yes, this was an unforgettable meal, but for all the wrong reasons. For us, The Dabney has jumped the shark.
