Well officially my first Michelin restaurant in the Bay Area. Hopefully, not my last, either. Greeted with smiles and great hospitality. Waitress was a motivator for sure. She was pleasant and not overbearing, which goes to every single worker there. We were not going to be shy and only order a few things. We ended up with 11items from the menu: #1 duck mousse with financiers( great texture and we felt the taste of the mousse was pleasant and not gamey) #2 smoked trout chip and dip( a bit heavy handed on the sauce, didn't really taste the fish at all, the chips were greaseless, nice) #3 charred cauliflower( definitely one of the highlights of the meal, cauliflower was sweet and the sauce was creamy with a slight kick perfect combo) #4 pork belly salad( another highlight with the pork having more meat than fat and the arugula and fish sauce was a perfect balance) #5 local squid( this one felt a little short for me, a bit bland, cucumbers and almonds were lost, but, the squid was cooked perfectly and chickpeas added nice crunch) #6 sourdough sauerkraut pancakes( no discernible sauerkraut flavor but the cheese was pronounced and I loved it. A touch too much salt though, so get the water ready) #7 state bird provisions ( I personally didn't try this one but partner said it tasted good with some gamey taste to it but expected with quail) #8 klingman steak( definitely, for me,the star of the night. Very meaty flavor, seasoned perfectly, a tad rarer then expected but still edible and the mushrooms and cabbage accompaniments were fantastic #9 horchata ice cream sandwich( amazing cinnamon based ice cream with strawberries and coconut ganache was such a perfect blend. I don't know why they call it a macaron, it tasted a bit more like a cookie but still delicious) #10 guava sorbet( fantastic textures going on and perfect contrast to the sweeter horchata sandwich) #11 world peace drink( gimmicky but still fun to try, wouldn't order again though. Well that's it, however, one side note, partner and I are not booze drinkers, so we ordered the shiso-yuzu drink and it was the perfect counter balance drink for all the dishes especially the saltier offerings. Hope everyone who goes to State Bird has as good a time as we did and hope to go back when the dim sum carts come back into play and the menu changes a bit.
