This is a combined review of several visits to Maude, most before the pandemic and one after their recent reopening. The food is creative and presented well. They switched from a tasting menu focused on an ingredient such as strawberry or basil, to one focused on a region such as Piedmont before the pandemic. Both were good, the ingredients a bit more creative. I can't imagine coming up with 10 novel dishes per month, but they did it well. The regional menus were great too. The service was uniformly excellent and friendly. The meals were paced well. The environment was serene.I was thrilled to see Maude reopen after almost 2 years. Unfortunately, our experience didn't live up to our expectations. I knew something was off when we opened the door. There were several staff with their backs to us and we were not greeted by any. Eventually, someone turned around, verified our reservation and we were seated at the counter where we prefer to watch the preparations, sort of like front row seats at a cooking show. There was no greeting there either. The sommelier plopped a wine list down. After a few minutes, another person took the order and we waited. The vibe was quite different than the past with staff shouting out each dish as it was prepared. There with much chaos in the room, I think waiters bumped into my chair at least ten times. The service seemed more like service in business class at an airline than a high end restaurant.The food was good, but not excellent. No dish stood out as something memorable. The presentations were excellent and precise. Two dishes were a bit cold when served. In one case, the server told the kitchen the sauce wasn't warm enough after he served us. As long as he noticed, I would have waited for them to warm the sauce up instead of being served something cool. The wine pairing were good, but much less wine per glass than I recall from previous visits, more like pours at a wine tasting than wine to accompany a course.After the meal, dessert was a lengthy affair in a loud room. It had the vibe of a jazz bar, but the dessert menu. Desserts were well presented but the flavor profile wasn't exceptional.I know it's tough reopening with new staff after being shut for two years. They need to work out some kinks. I will try again, but I'll wait a while.
