Incredible restaurant 5 star.
Ali was our server and she was incredible came in didn't have our reservation asked us if we could be out in an hour and a half we said yes and had a beautiful experience highly recommend this place

Service was very good. Our waiter was very attentive. The drink, however from the bar is probably one of the worst Moscow mule's I have ever had in my life. I would come here for the food, but I would not come here to sit at the bar and have a drink.

This is a review about the INTEGRITY of The Owner and CHEF Nobu Matsu. We came in one afternoon while staying in Aspen (aka not a local) and had a very expensive Omaksa lunch. I went to the restroom and my darling husband paid the check. As a surprise to me he asked Chef Matsu if he sold his chef coats (they were yellow at the time and I collect chef coats) and Matsu said he did and would be very happy to get us one. My husband gave him a $100 and Matsu took our address (therefore he knew we were not LOCALS) and promised when he ordered them he would get me one and send it to us. Well we left Aspen and the hubby waited and after a couple months we started to call and inquire where the coat was. We spoke with Matsu each time and he acknowledged he knew it was us but he never had the shirts come in... so now he lied too. This went on for several months, perhaps six or seven calls and a year's time passed and we finally gave up. Incomes the internet and YELP and I have never forgotten Chef. Well Chef you know you took my money and NEVER followed through with your promise and nor did you mail my chef coat or my money back. This would make me question the integrity and honesty of this establishment on every level. Especially when Chef is the one who crafts your bill when you go to pay. And by the Way Chef Matsu I am still a size Medium in a Chef Works chef coat. And clearly I have already paid you for my coat, including shipping. Namaste

Everything is overpriced. We ordered a king crab claw tempura costs like 25 bucks when it's served We Were all shocked by the quantity of the food. Just one bite and it's gone. Also the sushi We ordered didn't taste fresh.

Yes my friends and dear readers this place is as good as the hype and prior reviews. The menu is varied with so many choices. Start with a miso soup and edamame and be sure to save room for the rolls. Go with at least one evening special, and try the Japanese IPA - so unique and delicious! My only issue is with the constant removing of plates and dishes -- it's as if the staff wants to turn the tables as quickly as possible. But hey how are we supposed to people watch for all the urban cowboys and cowgirls if we are rushed out? Not fair! With these prices friends - take your time and enjoy every wonderful bite. Enjoy!

Our waiter Henry was very knowledgeable and very attentive. The best dish was bluefin tuna with jalapeño, as well as the wagyu. Henry recommended our wagyu to be cooked in a traditional way that was spectacular ! The maguro was too fishy tasting for my likely, as well as the spicy tuna crispy rice was underwhelming, while this is a stable for the restaurant I would have preferred to skip these dishes

My phone was memory was full by this time in our trip. I know we had some really good dishes. Our server was amazing and gave us great recommendations after asking some questions about what we'd like. I tried some things I wouldn't have thought to order. The drinks were also good. It was in a basement/ downstairs. It was very busy. It wasn't what I'd expect from a Nobu restaurant. Upstairs was closed at the time. A lot of things in aspen were closed during this particular time in November during their off season. I enjoyed this place and experience.

This restaurant is packed any night of the week in the best way. When you sit at the sushi bar you are able to see for yourself the top tier quality of the fish. The menu ranges from fresh fish to hot scallop dishes. Ambiance includes dimmed lights, medium to loud chatter, and fast paced servers.

Typical of any Aspen restaurant. All gear toward tourists. Dashi was so tasteless. It is the base of all Japanese food except sushi. I do not know how Nobu let this happen

Came here for dinner and was very happy to be able to get a reservation as they were booked out for a whole month it's important to book this place a month in advance. The food was very tasty and the sushi was fresh. We ordered many things, the sea urchin or uni was very sweet and tasted incredible, the Toro was buttery, the bluefin was also impeccable. The sea bream or red snapper was so good I recommend more people ordered that one. We also ordered oysters and had a lot of drinks. The lychee martini was what I ordered it was very tasty I'm pretty sure I ordered three or four.

I don't think I need to list all the reasons why this is a five star restaurant. I've eaten sushi across the world including Japan. Besides the sushi in Japan, I would consider this a top 3 sushi spot for me. I want to put it number one but I feel like I might be missing somewhere. If you're in Aspen go here, it is my favorite restaurant in Aspen. Price point is high but who cares. Refinance the house or ax your wife's Pilate memberships if you have to. Eat here and tell them some random yelp guy sent you.

I don't love that there is no natural light given the beautiful scenery in the area and a cool historic house. When you walk downstairs it seems like it could be any nice sushi restaurant. The food does not disappoint. We are everything! They are great with dietary restrictions. Most things can be modified to be gluten free. The drinks were generally tasty - with the exception of the gin drink that was basically a disgusting Gin and tonic. The lychee martini is very strong here - but still tasty. Especially since covid - it seems like restaurants have had less than ideal service but this is not the case here. They are swarming with servers, table bussers, and other staff to aid in your experience.This is my second time going. I am looking forward to going next time I'm in Aspen!

My lychee martini was so ridiculously strong that even my friend who always orders dry martinis was surprised. The sushi rice was overly salty in the nigiri. Most importantly, we were shoved into a crowded basement for the meal, which certainly didn't rescue my perception of the institution.

Beautiful food with a great vibe. Be patient and wait at the bar if you can't get a reservation. The tables turn over in a timely fashion and the bar tenders are very accommodating!

it always leaves you with "what did I just put in my mouth" and "holy sh**" and "I would have ten more of those". Im all for a 5 dollar burger- but don't mind the cost when the restaurant delivers and matsuhisa always delivers. order the king crab tempura- it's not what you think of when you think tempura. i want to bath in the broth. and sit at the sushi bar and order whatever they tell you to. treat yourself!

The food was good, even thought out of a group of 12 people everyone received their meal and mine came 5 minutes after. The reason for the 1 star is that one of the guests who ordered sushi is down with food poisoning after eating dinner. Less than 12 hours after consuming the sushi the guest has been throwing up, is experincing the chills, and overall is feeling awful. We will not be returning. For those going to this establishment recommendation to re-evaluate the decision to order any raw fish from this establishment.

The service is good. The crispy rice wasn't as great as I was hoping. The rest of it - from miso black cod to the tuna and salmon appetizers were 5 stars. Been here a few times and it never disappoints. Between 4 and 5 stars.
