Welcome to a new level of dining experience in the most unimposing building in Melbourne.This was a surprise dinner for our anniversary. From the moment we walked down the inviting stairwell, we knew we were in for not just a great meal but dining sophistication that we would remember for a long time.Maha is the genius creation of Shane Delia who keeps on creating and making places that are 'stand-alone' classy.The 'servers' all dressed in the same simple black slacks, vest and a striking gold tie - classy.Our server for the night was Libby, who greeted us with "happy anniversary" (yes, my partner had primed them about why we were there) and we were escorted to our table. I always like to take the table that looks into the room so I can watch the meals that are coming out but also generally observe the atmosphere of the restaurant."May I take your jackets?" from Libby. We are truly in the land of graciousness.We perused the all-encompassing drinks menu but had us at a sticking point - Gin, which one? Vodka, which one? Scotch, which one? Maha pride themselves on their extensive choices. There is an option to pair your wine with your meal, which had the sommelier busy, ensuring the food and wine complemented each other. We decided to go with cocktails and hence, bring on the margaritas! To start we were offered the usual water sparkling or still, of which the former is bottomless and continually topped up. Then arrived a Crimson Kiss and a Margarita that set the stage for the evening.Libby helped us with what to choose on the menu, explaining the options, upgrades and how we could switch out some food depending on our tastes. We chose the tasting menu, a five course selection of middle eastern culinary reverence.Initially, five dishes arrived at the table, Libby explaining each of them. I seriously wondered if we'd made the wrong choice, that the quantity of food in front of us would mean we'd be full too soon. Fortunately, it was just the right amount.Course 1 called Meze, consisted of several plates of flavour bombs that had layers of texture, colour and seasoning that had my palate in overdrive. The smoked hummus, celeriac, mushrooms and burnt butter with grilled flatbread had a combination of exciting flavours. Grilled house, harissa pickled cabbage, capsicum, lemon and parsley with warm olives were easy to graze on. The lamb kibbeh, ras el hanout roasted pumpkin yoghurt was skilfully prepared and a light portion of the Meze.The wagyu beef, glazed beetroot and hibiscus, pickled turnip, sheep sorrel was one of our favourites. I won't go through the entire menu except to say the wagyu beef croquettes were a stand out. Once the table was cleared of the almost 'licked clean' plates, a platter arrived on the table with two hot cloths and a sprig of rosemary. Nice touch. Time to freshen ourselves for what was coming next.Other courses consisted of dry aged Macedon Ranges duck breast with clove, roasted quince - cooked to pink perfection. Roasted bullhorn peppers, smoked eggplant and harissa, pickled daikon and orange tarator in a portion size that was welcomed after the first course. Dessert polished off the night with a light sutlac roasted rice parfait, sesame nougatine, rice ice cream honey and lemon. We were grateful for a light but glossy tantalizing dessert that was almost like a sorbet as it cleansed the palate.Between courses, the servers float in silently and sweep away the empty plates or wipe the table clean before the next course.The ambience felt like we were in an exclusive club, with subtle lighting and music that is soft enough not to annoy you but loud enough that everyone now and again my shoulders would move rhythmically to the beat.Disabled friendly with elevator available at street level.This is a standard of dining that may not be in everyone's budget but I encourage those who enjoy food to explore Maha and immerse yourself in classical Middle Eastern food in the 21st century.
