Rushed loud unfriendly
Disappointing. Food quality was good but atmosphere was more like a club. Music too loud. Felt like we were rushed to eat up and pay the check and get out. Not a place for a couple. Full of large groups. Zero atmosphere. Expensive. Very disappointing. Been to this restaurant before on many occasions but will not be returning.

I don't eat seafood but was so excited about the Wagyu ramen. The presentation was nice but it lacked flavor in just about every way. Quality of meat did not taste like the A5 I'm used to eating back in CA. I ended up giving the dish to my boyfriend because he did not like his roll - ate one piece and by the look on his face I thought he was going to return it to the plate. I ordered the wagyu gyoza instead since I was still hungry and it had an overwhelming taste of cinnamon? Also was very dry so ended up dunking them in soy sauce which was a shame. My boyfriend enjoyed the other hand rolls he ordered but again, nothing special and just didn't match the price tag. He's had much better sushi for half the price. Perhaps we are spoiled by restaurants like Nobu and Sugarfish where we live so our standards are higher. Service was fine, nothing remarkable but they were busy so that's understandable. Our server was kind. The design/vibe of the restaurant was cool but the music was so loud we had to shout over the table to hear each other. Disappointing overall after spending nearly $400. Will not be back for dinner but maybe for a drink at the bar.

Poor quality sushi
The cooked and composed dishes were ok. I would stick with those if I ever returned. The sushi was very poor. We had 10 different pieces of nigiri. At best it lacked flavor. The uni was disgusting. The rice was over cooked and cold. The restaurant is large and crowded, lacking any sort of intimacy. The meal cost close to $600 for 2. I would have preferred sushi from a grocery store. We have been to Matsuhisa at other locations a few times and we have never had a poor experience. We talked to the manager about our poor experience with the sushi and he implied it was our fault for not talking to him prior to finishing the sushi. I guess I foolishly thought that with each successive different piece of fish, the quality might improve, however it is the opposite of that which proved to be true. Needless to say, we will not be returning.
First of all, this restaurant is stunning.
Although not very big, the layout and decor is chic and alluring. Think the word that comes to mind when you're here is Mysterious? My husband thought the whole place felt affectatious. The place seeks to have this nightclub-lounge-speakeasy vibe with its super-dark lighting (almost black!). It took a good 15 minutes for my eyes to adjust to the dark lighting. I have terrible night vision...and initially I could barely see. It was stylish and sexy, but definitely not comfortable. Like a nightclub, there's even a coat check station. The overhead music was very cool...progressive, metro chic and loungy. Whatever you'd call that music genre now lol! It was cranked up a bit loud...and I think it weighed on my husband, who doesn't love this genre of music like I do. The place was obviously a magnet for a ton of pretty, young people of Aspen. I was just glad that my husband was facing me, seated away from the room, which was filled with a ton of hot, single ladies lol! The pricing was completely outlandish...to be expected of Aspen. We ordered several items off the menu to share...White Fish Tempura, Shrimp Tempura, Smoked Kurobuta Ribs, Spicy Salmon Roll and Ube Waffle. For drinks, I got this Chai cocktail...and I think my husband got the Sake? All items were delicious...but in a way, I thought they could have been better. Also, they should have cranked up the presentation more...considering its price points. I just felt that the foods could have looked as expensive as they were priced. Guess if I HAD to choose, I liked the Ribs and the Ube Waffle the most. The service was good...but somehow, a bit inconsistent at times. Overall, I was impressed with the decor and the vibe much more than the foods (again, quite underwhelming in presentation...especially for the price points). Still, I enjoyed the dining experience here...despite some disappointments. However, my husband may not have quite loved it when he got the final bill lol.
The ambiance and music is perfection.
We went at 6:30 with our teenage kids. It felt private and exclusive at this time. Around 7:30 the guests started to pick up. We had many entrees to pass, my fav was the fried dumplings. I absolutely love the hand painted walls and fabric on the booths. The service was excellent. Def worth trying! Go to Gala afterwards if you're with all adults. :)

My only complaint is the guy who was playing music in the restaurant is completely gone deaf -- if the music was better this place would be a 10/10
Inauthentic and not even tasty.
Don't expect true, high-quality sushi or Asian food. The sushi was covered with ingredients that make no sense, and the fish smelled like it had turned. They also serve steaks that are ~$200, and while I didn't order them, they looked unappetizing and stale. The ambiance is fine but over-the-top and arguably a bit offensive. If you want a scene and to overpay for average food, this is your spot. If you want high-quality food and a good experience, look elsewhere. They have a lot of good reviews, but if you look at many of them (especially the older ones), they're incoherent. I wouldn't be surprised if they paid for bots to post them.
Probably the best Japanese food
Make sure you book a long time in advance or know someone with connections for a reservation. It is well worth the effort. This is as good a Japanese meal that you will eat. Not cheap but delicious
Food: Awful.
This restaurant felt like a place that copied a sushi restaurant. Fish was not fresh - smelled. The sauces were unbalanced for many dishes. The wagyu dumplings tasted as if someone dumped cinnamon. Service: It was NYE. I get it - the restaurant is busy. However, after booking my table for 1 month in advance to celebrate an anniversary, they placed my husband and I on a high top by the entrance of the restaurant. We didn't want to sit there. Frankly, it was a horrible seat. The hostess was incredibly rude about it when we inquired about being seated elsewhere. The manager found a way to accommodate us in the main dining room, but I was shocked by the service. The waiters were very pleasant, however, so nothing against the wait staff. My last thought is - this restaurant felt like one giant cultural appropriation of Japanese food and culture. Everything inside the restaurant, including the food, felt like imitation.

I have traveled the world eating at good restaurants and this was my favorite in Aspen. The music, ambience, food and service was outstanding. Highly recommend the scallops. Lychee martinis were great too! Eating there again this week!

Excellent dinner and service
We had a fabulous dinner. The service was spot on and the food was absolutely delicious. We had so many options and tried a variety of dishes. Pleasant atmosphere that was enhanced by the warm service. We will definitely be back.

Poor
Just letting you know that my husband and I love Matsuhisa, but this time was not the case. We were celebrating our 40th anniversary and we love the chef’s experience, but we didn’t realize that Antonio thought we were going to share one versus two.We visit the one in Cherry Creek and never had this happen. First thing, my husband ordered a glass of sake which I believe he was forgotten about since I had to ask one of the servers about it half way through our service. Antonio placed our order and didn’t check back with us until he gave us our check. Everyone in between was great except for the one that gave us our dessert. He didn’t even tell us what it was. We believe it was a coconut cake and chocolate ice cream. What gave us the biggest clue that it was only one order was when he served us a lamb chop that wasn’t cut and we didn’t have utensils to cut it, so my husband and I had to bite it and sharing a miso soup was definitely weird. We were told that we had to visit the Aspen Matsuhisa, but this was not enjoyable experience.
