.. an 18-course masterpiece and hands-down the highlight of my most recent trip back to Prague!!! Some of the best food I've EVER had the fortune of tasting (I was literally licking every last drop from start-to-finish), and truly beats some 2 and 3 Michelin Stars in the US through and through. Molecular, let alone modern, gastronomy at its absolute finest!!!BACKGROUND: I was in Prague for work last month and just so happened to have a free evening on my last night before flying out the next morning to Santorini again! There are only 5 seatings per night and I was sooooo lucky to have grabbed the last one. I chose the 18-course Mystery Menu (3000 KC) and it honestly BLEW. MY. MIND. Complete sensory overload!FOOD: Without spoiling too much since the mystery is part of the experience, there are 6 "series" of courses with 3 courses per series, each series featuring a Flora course, an Aqua course, and a Fauna course. Per the restaurant website:(1) Flora - "Here, fruits of the forest meet exotic tropical Asia. Flora is where molecular gastronomy offers unexpected, daring combinations to stimulate your taste buds. If you are a vegetarian or lover of light foods, this is the menu for you."(2) Aqua - "Freshwater fish that always been revered by both Nordic and Asian chefs, and Aqua symbolizes the perfection of our fusion. At Levitate, Nordic ingredients and preparation methods meld with Asian herbs and our unique sauces. The result is a mixture of flavours that will enchant all your senses"(3) Fauna - "The philosophy of Nordic cuisine emphasizes the use of local ingredients. Fauna will thus for example include Wagyu beef from certified local farmers, duck with garlic and five spices, or a dessert of foie gras immersed in hot chocolate with tofu chips as a reminder of our Asian cultural heritage"Opted for a bottle of local pinot noir that was recommended by the sommelier and it made an already special evening truly unforgettable!I would do a stopover in Prague on my future trips to Europe just to dine here again and again and again!!!

Levitate rivals some of the finest Michelin star restaurants I've known. One of the other reviewers compared this place to Alinea in Chicago, and I had the same thought. It's more low-key compared to Alinea, but the experience is no less impressive. I wonder if it'll remain under the radar for very long. My meal there was one of the most memorable dining experiences I've ever had. Highly recommend this to others seeking a fine dining experience.We opted for the Mystery Menu with wine pairing. The bites, as our server--more like food guide--explained, followed the ordering of flora, fauna, and aqua, just like the three symbols on their logo. Every course has three dishes, each representing one of these elements. The server talked to us about the food and the wine, and at one point we were invited up to the bar where the chef personally served a few dishes. All the dishes were beautifully and innovatively presented. My favorite presentation was the mushroom forest, which echoed the wall sculptures of wood and moss. My favorite dish was foie gras dessert, where they flash froze foie gras in liquid nitrogen and mixed in some chocolate magic. The result was a melt-in-your-mouth little river rock that tasted delicate, a little sweet, a little savory, and rich but not overwhelming. It was mindblowing.The restaurant is subterranean but the decor livens up the space with green moss sculptures on the walls and clear glass bubbles with butterflies hanging in the air. Lovely place, lovely people, delicious food and drink, unforgettable experience.

Wow...absolutely blown away by this restaurant. If you are in Prague, you have to go here, do not look elsewhere. The food and ambiance is on par with at least a 2 Michelin Star restaurant. The dishes combine unique flavors yet are well balanced and the presentation is top notch. Great cocktails, cauliflower truffle onion fantastic, coolest presentation with the quail egg mushrooms, pumpkin dessert was also very memorable. One of the best restaurants I've been to in Europe (among World's 50 best and Michelin).

The chef came out many times to describe his artistry while setting the final pieces of each course and shared his culinary journey which was a special treat. Please experience this amazing place!!

What an amazing experience!We've dined at several modern gastronomy restaurants over the years and Levitate is right up there amongst the top and many dishes rival what you would get at even French Laundry, all at a very nice price. The dining space is very intimate and decorated with many elements of the outdoors and created a very relaxing environment. We chose the chef's tasting menu, paired with European Wines (Czech wine pairing is another option) and everything paired perfectly, even a couple of more unusual tasting dishes. Chef Christian created a truly exceptional experience and of course came out frequently to explain his dishes or just see how we were doing. Levitate is a must when you're in Prague.

Coming from NYC and an extensive background in good food around the world (closest comparisons are Atera in NYC and yes, Alinea in Chicago, think molecular gastronomy), was very impressed by this. The chef has a sophisticated flavor profile -- was super impressed. The tomato basil starter is one of my favorite dishes of all time -- very nice pairing of the tomato oil with the foam, it's hard to explain, just eat it. Loved the mushroom and there was an omg dish with a truffle sauce that was to die for. Foodies visiting Prague should check this out. Will get a Michelin very soon for sure.Details: Had the 8 course dinner w a bottle of Italian Barbera (good value) and started with the rum/coconut milk cocktail.

We stumbled upon this restaurant on our way home, and we're sure glad we did! We had dinner elsewhere so we just wanted dessert and the menu outside showcased interesting combinations like foie gras, white chocolate, and tofu crisp and it enticed us to peek in. It was really cute so we decided to ask if it was okay to grab just dessert during dinner time and they were so nice and welcoming. All the combinations of drinks we got were amazing! Super interesting like the food. I got one with whiskey and coconut water and another with gin, sake, matcha, and passion fruit. Because the food looked so good, we ended up getting the wagyu tartare (the cow was from a farm 150km away) and everything from the presentation to taste was so yummy. We also got the foie gras dessert. They also treated us to on the house bites pre-appetizer and pre-dessert and a third one to finish. We were blown away!Our only regret was that we were already really full so we could order additional things. We will definitely recommend all our friends come here and do the tasting menu!
