🤮 1/5 - The Chef Traded Authenticity for Convenience and Mediocrity

I didn't order main dishes, just 4 snacks for my dinner. The 'pan-fried raw pork bun' or 生煎包 is a famous snack where one can find in the streets of Chinese cities, especially in Shanghai and surrounding areas. Each dough is ~4cm, filled with minced pork and the street vendor would fill a big pan with maybe 100 of them, add water and oil, cover and pan-fry them until done. The vendor will then sprinkle sesame seeds and green onion on top. The bottom would be crispy, the top soft, the inside is well-cooked minced pork filled with its juice. Buyers would lineup and wait for each batch to be cooked, buy them and devour them on the spot. This is what 'pan-fried raw pork bun' or 生煎包 should be done.
This chef chooses to precook the bun and in order to maintain the texture of the bun there is no more meat juice inside. When the customer orders this, the helper will just briefly pan-fry the bun and serve. This is mediocrity and this should not happen in a 2-star restaurant.
The pan-fried dumping suffer the same fate. Two other snacks are also of mediocre quality but since this review is getting too long I shall omit but to mention another disappointing event:
As I tried to pay the bill with my credit card, it didn't work and the restaurant discovered that the credit card system was not working. I was told to wait and drink tea. After half an hour they concluded that the system wouldn't be fixed in time before the restaurant closed. So I was wondering what they would do (a reasonable solution would be to take my hotel room # or phone # and get me to pay the next day). They did nothing! Finally I said I had some foreign bills, they were relieved to hear that and they escorted me to the casino cashier to exchange my foreign bills into Macau dollars. I paid the bill. For all the trouble I got 10% off, but even a normal casino customer would get at least 15% under normal dining.
