Two everlasting impressions of Ever, the glittering and glitzy restaurant that Michelin starred chef Curtis Duffy and his business partner Michael Muser opened in 2020 at 1340 West Fulton in the historic Fulton Market, in the West Loop neighborhood, a block east of Ogden: (1) it is the most elegant restaurant in Chicago since the Dining Room at the Ritz-Carlton closed and (2) it offers the finest tasting menu that my wife and I have experienced since three-Michelin star chef/owner Patrick O'Connell changed to a tasting menu at his world-class Inn at Little Washington in Virginia. Duffy, who earned his Michelin stars at Avenues and Grace in Chicago, offers eight to 10 courses from 5 to 10 Tuesday through Saturday. The trick is to select items of meat, seafood and vegetables from three menus and find time to consume them all while admiring the dining room's posh decor. Where did they get all this glass? And how did they put it all together? Truth be told, I wasn't a fan of tasting menus until O'Connell explained that he decided to make the switch because it gave him more opportunities to be creative in the kitchen. And when you let Michelin-starred chefs like O'Connell and Duffy loose in a kitchen, the result is many innovative and delicious items. So, on our first visit to Ever, we indulged in King crab, salmon, scallops, squab, butternut squash, maitake, miyazaki, hamaichi, tomato, peach, chocolate, melon, black truffle, parsnip, chartreuse, even caviar. A little of several items instead of a lot of only two or three items. And the fun of it all is to see how a world-class chef puts it all together.
