Let's start on the positive side. This is one of the most beautiful physical dining environments I have ever encountered. Taking a page from Disney story telling, the entrance to the restaurant is carefully crafted to transition you from a Chicago street front into a culinary mecca - a home run. It is a very calming zen environment. But that is where it started to fall apart. The entrance used curved hallways to channel guests into the dining room. We happened to be seated next to the kitchen entrance to the guest space where the same design was used and the hard curved surface channeled every kitchen conversation and clang into our no longer zen space. I challenge the owners to enjoy the ambiance at our table. (Not that it matters, but we had reservations well in advance, speak softly, and were well dressed.). Their acoustician should be shot. The meal was a study in "teaching to the test". Far too much effort was invested in trying to check the boxes to achieve 3 Michelin stars (failed) than to actually provide a good guest experience. For example, I understand Michelin requires staff monitoring guest tables but service is supposed to be magical and unobtrusive; the dining rooms are surrounded by vultures. If I had to come up with one word to describe the meal it would be "soulless". The one saving grace was our sommelier who actually had some personality. He was a gracious host and not a robot. My husband had the wine pairing and was very pleased with his choices.
