El Invernadero Rodrigo de la Calle Madrid Reviews from The Last Year
Very original proposal around the plant world
Memorable dinner at this place. We chose the gastrobotanical menu, which includes a meat and a fish. That day their chef Rodrigo de la Calle was not there but everything still went smoothly. Starting with the place: small, intimate and extremely cozy, with a bar and a few comfortable tables with good separation between them. The proposal seems unique to me, different from all the tasting menu restaurants I have tried in Spain. Everything revolves around seasonal vegetables, in this case spring, such as white and green asparagus, teardrop peas, morel mushrooms, etc. Thanks to the techniques it uses, it gives a special touch to each vegetable that sometimes dislodges it for the better and gives a deep flavor and many nuances to the dishes, as well as different textures. This is the case, for example, in the preparation of onions. In the background, an onion soup with a very deep flavor and swimming over it is the onion itself, which has an incredible texture for me. The onion is usually crunchy but in this case it is almost honeyed, it falls apart as you eat it but maintains everything. Its flavor: surprising. Another amazing dish seemed to me to be the white asparagus in textures: with ice cream, a cream and the asparagus in papillote, rolled and it is very crunchy and tasty. The ice cream also maintains the full flavor of the vegetable and the caviar plays the role of "salt". I liked all the dishes and they seemed full of flavor and nuances. Also those that are fried, very clean and well done: nothing thick or greasy and crunchy. And the asparagus dish, whose vegetable flavor looks very good accompanied by that very fresh lettuce soup with that touch of acidity. As for the teardrop pea pass, what shocked me the most was that the main protagonist of the dish was an eel royale with a very powerful flavor that displaced the pea to a testimonial role, with an "explosive" texture but whose flavor is overshadowed. The dish that excited me the least was the sweet potato, tasty thanks to the leaf that wraps it emulating a taco, but for my taste it is a little dry. I liked the desserts but less than the salty part. Its lightness is appropriate after so many dishes that make up the menu. The details and craftsmanship behind this site is very commendable. For example, the breads they make are also delicious. The one with lycopene and the one with spices, with a crunchy crust to the limit. The drinks are also original: I chose the alcoholic and the very original and different wines, mixed with vegetables like beets. The mead they serve at the beginning of the menu is highly addictive. In conclusion, a totally different and unique tasting menu experience with vegetables as the protagonist and round preparations enjoyable for everyone: whether they are vegetable lovers or not so much. It is important to put aside prejudices with vegetables. The price is not cheap but it is worth it if you enjoy this type of experiences.
Fast and attentive
After a warm welcome from the head chef, numerous beautiful and tasty dishes immediately began to be presented. We chose the vegetalia + cheese menu with different pairings: one based on non-alcoholic drinks and another with local wines. There are many dishes but the food is not heavy. And we ate very well, of course. The service, fast and very attentive.
Disappointment
Excessively loud music, unprofessional service, there is no sommelier or no one advised us on the choice of wines, the cutlery is not changed unless you tell them to and what happens is that they get mixed up when it comes to replacing them because there is no order, the The bases of the sauces are all similar, the menu is excessively long and there is a lot of hustle and bustle of staff that annoys the customers, the chef only said goodbye to the diners at the bar and the rest didn't even look at them, I don't know who gave them the Michelin star... they fail them many details not recommended
Amazing. Go. Go. Go.
This is not just a restaurant. It’s a magnificent culinary journey that is utterly unique. When you arrive they show you where the bathrooms are and suggest you wash your hands as the first few courses can be eaten with your hands. The service was impeccable. The young lady from Uruguay (I think) was amazing as were everyone we were served by. Their knowledge and service standards were just incredible. We had the vegetarian green menu with paired wines and drinks. From the licopene bread to the final morsel everyone of the 23 or 24 courses were marvellous. So many divine flavours and textures. Highlights included the rye matcha bread, carrot ice cream, amazing mushroom dishes (as it was mushroom season). The truffle dessert - yes black truffles on a dessert - was sublime. We had an enviable position where we could see the owner/head chef Rodrigo De Le Calle and his incredible brigade work so hard throughout the service to bring us such wonderful food. They work in a small space and with the serving staff it was great to watch how they worked in calm harmony. The team work like a well oiled machine that looks like incredible choreography. The chef came and chatted to guests. What a genius and so humble. What a talent. His ethos is simple. He wants to create the food he grew up with. Mainly eating vegetables hence the green menu, the blue with seafood as a seasoning or red with meat as a seasoning as meat and fish only figured occasionally in his families diet. The dishes are all spectacular bursting with flavour. Each more incredible that the last. We just loved our experience and if we lived in Madrid and subject to budget would be there regularly. This chef and team deserve more recognition. It’s easily better than many two Michelin starred places I’ve eaten in and with less gimmicks and theatrics. What you can taste and experience is the love and passion that has gone into every dish and every moment of service. It was a remarkable evening. A memory that will last a lifetime. Go. Its amazing.
a special celebration well done
a special celebration well done my kids chose it to bring in my 50th birthday a great choice and we absolutely loved everything about the evening the blue water, the mulled wine, my orange wine the different wine's and teas and cheese the kids tried most of the courses worked for me specially the meal began extremely well and most of the bigger courses and desserts were superb they really know how to do a plant based tasting menu well done our server was French and she explained everything so well really enhanced our experience.
This tops my world-wide restaurant list!
This was one of the best meals of my life! Service was impeccable, plating artistic and gorgeous and an ambiance that is beautiful and relaxing. It’s an excellent experience and feast for all the senses. More than worth the money and I would fly back to Madrid to eat here again!
Marvelous
You enter and see a bazaar of beautiful things, you leave and you still have the taste of acquired taste, the elegance of the service, the splendor of the furnishings, the taste of the table, the choice of every type of solution. It is and will be my restaurant in Madrid! Thank you
BIKRAM diner in a 1 Michelin star restaurant
We were really excited to try the vegetarian menu in a 1 Michelin star restaurant. When we arrived we were first directed to the toilets, which seems very strange as this is not the first thing you want to be introduced to when you arrive in a restaurant. We felt like we were entering a sauna, it was so hot inside... Our friends already asked the waitress but she told them that the AC is working and its just because it is so hot outside, very strange explanation… nothing can be done about it, but then brought a massive fan... Still we felt that it was really extremely hot and asked another waiter who told us he was sorry the AC didn’t work and that it was also hard for them as they were really hot... Surely the AC didn’t break 5min before diner service and we would have actually cancelled the diner if we knew that it was hotter inside than outside, that says a lot as we are in August in Madrid. No one want a 21 courses diner sweating at the table with a fan blowing on you. They then put the AC machine above us because we actually pointed at it and asked them which was actually blowing hot air, didn't make a big difference just more hot air blowing on us... The highlight of the night was the food, the wine and the water, everything was delicious and well presented, the different breads were delicious and the wine as well with very affordable price. Everything was going well until one of the waiter dropped a bowl on my wife shoulder while serving, the whole thing was on the floor. We got offered cheese which would have been amazing to try but with 35 degrees inside, we went straight to dessert. Which again was delicious. On the way out the waitress run to us saying that we haven’t paid the full bill, even though we actually left 14EUR extra, very embarrassing in front of everyone and also clearly they can’t do the maths. They didn’t even give a small discount or offered anything to apologise for the extremely hot conditions we had to eat our dinner, very disappointing for 1michelin star restaurant… Great food but definitely not honoured by the rest…

Thank you for the question, if a seller is working on answering your bid, you cannot cancel it until their time is up and the bid is released back to you. The full amount of funds then go back into your AT account. Typically a seller has 48-72 hours to complete the bid.
