What a perfect evening.
This place takes service and customer experience to a level seldom seen in Vegas restaurants. The drinks were on-point, the array of nibbles provided before ordering was generous and tasty, and the food was comforting and delicious. Really can't think of a single negative thing to say about the entire experience.

We were wowed from start to finish: rich red wine, the iconic meatball, Caesar salad, veal parmesan, pasta, and dessert--all flawless. A must-visit in the wonderful city of Las Vegas.

Also, they knew it was our anniversary and got no mention, no acknowledgement, nothing! For Italian food we know of at least 3 spots that are way better and not snooty!

Service was very good the waiter did a good job detailing the menu and gave good recommendations. The main course came 20 minutes after the salad. The pasta was al dente and flavorful. They had an excellent bread basket and cheese. Baked clams were small but tasty. The veal parm was a huge disappointment it was dry and had no flavor. It was a great atmosphere. As an Italian from Boston they can't compare to the Italian restaurants in the east not even close Definitely not worth the money we paid especially the veal. It was my wife's birthday and they gave her 3 dry finger cookies. I should also mention the Mai tai was excellent.
Affina was our server and was just so welcoming and kind.
She made us feel welcome. Zero pressure on anything and was only interested in us enjoying ourselves. The food. Omg. Caprese was available and the house made burrata and the heirlooms were a perfect pair with the pesto. Vodka rigatoni lived up to its reputation and not a noodle was left. And we ordered one meatball and it damn near stole the show. Loved the bread content that soaked up the moisture from The veal and beef And then then the veal parm. Whoa. Perfectly Balanced and not over sauced so there was an excellent crisp at the edges, and a light coating cooked in a perfect temperature oil so there was no saturation. Entirely too full for dessert after eating the complimentary picked cauliflower, salami, and best bread basket in the USA THANKS to everyone at carbone. Will see you again next trip. Thanks for being so kind and hospitable. Didn't feel like a tourist...felt at home. At my corner table. Like a Boss

Old traditional Italian with a Great vibe!
We don’t have a reservation but we walked in at sat at the bar. Nick was our bartender / server and he was amazing. We ordered Lobster Ravioli and linguini with clams. They served us an amazing g assortment of breads, salami, cheese and picked cauliflower to start. And an Italian wedding g cake slice to end the meal. With tiramisu and lemon cake for dessert, the food and service was incredible.Highly recommend this place. Its fun and vibrant atmosphere reminds me of an old Italian family!i

We had the best service while dining at this restaurant. Food was 10/10. Our captain Dion was very attentive and thorough at explaining the menu and options for us. We will definitely be coming back!
Awful! Avoid at any cost!
Big disappointment. Nothing close to the Greenwich Village gem. Those parts of the food that were actually edible were just okay. Captain was obnoxious (and I still left a big tip knowing that the others who share it should not suffer). The best and only good part of the meal was the bread and parmesan cheese. The captain repeatedly tried to talk us into ordering the caprese salad despite the fact that I hate tomatoes and my wife cannot eat them due to acid reflux. He insisted we would regret it because they would be the best tomatoes we ever ate. I guess they overordered for the day and needed to push them. The minestrone soup was inedible and sent back. The captain apologized saying it is the worst item on the menu, and he often talks people out of ordering it. The special corn compote was likewise inedible and should have also been sent back. The salmon was okay but the mixture it was served over was tasteless and hard to describe. The chef must have gotten his training at Riker's Island. Plenty of much better restaurants in Las Vegas.
Great food and service
We ate here for the first time and our opinion is the food and service was fantastic. We ordered the vodka pasta and the veal parm. Both dishes were excellent. To start they gave us a bread basket with salami and some parmesan cheese chunks, delicious. It is on the pricier side but we knew that going in and were very pleased with the food. We will go back next time we're in Vegas.
Incredible as usual!
Sat at the bar - awesome service. The veal parm was outstanding as usual, and I always love the bread basket they bring out. Despite some bad reviews, Carbone is a must visit for me every time in Vegas.
Good food
I went here for dinner. The food was good. The servers were quite nice. My problem was the speed of the whole thing. It takes forever to get the food. I was seated for over an hour before hit anything that I ordered. As for the food. I had the Angel Hair in olive oil and the ribeye Diana. But we’re quite good.
Save Your Money
Save your money! If you like small portions, expensive meals, and average food at best, this is the place for you. Kudos to the staff, they really try to make your experience special but still not remotely worth it

Fabulous experience. Service was great - waiter very attentive. Food was fantastic - had the Caesar salad and burrata and then spicy rigatoni and salmon. Salmon was the weakest of the dishes but still good.
Stay away from
This place has gone so downhill over the last few years. It really sad. The first time I was there was magical and sense 2021 it’s been very disappointing to see the quality and service go from being good to terrible in at least two years. Much better experiences in Vegas for a memorable dinner. We spent 1000 for a pretty standard three person dinner. Just terrible.

This was the worst place ever they didn't want to serve us because we didn't order drinks and the only people that wanted to help were the people that brought the food out the main server didn't want to help us and rushing to take our order. Also when my father gave the server his players card to add points to it the server took and did not add and instead he lost the card. I would not recommend dinning here go to olive garden trust me it taste better
Excellent Food, Grossly Overpriced
Carbone is overpriced even for a Vegas Strip restaurant. The food and service are top notch but even that cannot justify the price. For the table we had caprese salad, meatballs, eggplant parm, strip steak and a couple of desserts. No alcohol and the bill was in excess of $450.

I always base my reviews off the food and never the service (or ambiance) because the only constant thing should be the food. I do understand why people are hyping this place up. Between the tableside service and the New York-esque vibe in the room, it's cool; however I am a food over everything person and with that being said we ordered: Carpaccio Piemontese - Fuckin delicious. This and the bread basket with the cured meat, cheese and cauliflower they bring out in the beginning is really all you need from this place. Pretty much the strip equivalent of how you can just order the Bread and Spreads at Esther's Kitchen Bread.... Spicy Rigatoni Vodka - This was a dish that was recommended by a lot of people. It's not bad but it's also not the best thing on their menu. I'm a bitch when it comes to spice (a Thai 5) but just like Klay Thompson on the Warriors, it wasn't there and I was missing it. Ribeye Diana - Ummm yah about this dish. It's good, it really really is. The flavor is there and the cooks know how to handle their meat.......... Maybe cause I'm broke, but close to $100 for this dish is wild. The way it tastes it's more like a $65-$75 range but hey I don't run this place and people are buying this shit up. Potatoes Louie - The second best thing that blessed the table. Bunch of garlic and butter. So simple yet so good. This and the carpaccio is all you really need. Nutella Tiramisu - I enjoyed the lady finger.......it was like Canelé's (the French pastry) cousin or something....Tiramisu was decent, the other person shitted on it and said Sam's Club Tiramisu is better... I said that's fucked up, never had Sam's Club Tiramisu but I'm pretty sure it's better than that. Based on the food itself, I think it's properly rated at either 4 or just under 4 (at this moment its a 3.8). Everything is solid and even though I did gripe at the price of the Ribeye Diana they could have easily charged me $15-20 for the items that they bring out in the beginning. It's a sturdy place and you should try and experience it at least once.
A made a reservation well in advance for my birthday.
They contacted me last minute like few hours before that there is a minimum amount $208/pp for my party. That is such a shady move on their part. Probably trying to make room for another party by screwing me over. I don't recommend this place at all. It really was a douche move.

Unfortunately the walk through Aria resort just to get to the restaurant is 10-15 minutes long, and we showed up a few minutes late for our reservation. The front desk was extremely unaccommodating and had given away our table minutes after our reservation time. Understandable, however once we arrived they placed us at the back of the line to be *potentially* seated at 10pm lol. Never had such an experience at a restaurant before. Having lived in New York and been to the original Carbone several times, this place has pathetic service. Lower your expectations when coming here and consider booking a different restaurant in the area!

Ive had way better authentic italian for much cheaper with better ambiance than Carbone. What made it worst was this server he was judging us and rushing us to order and threw away our players card.
Carbone is one of the must go places in Las Vegas.
As a result, it is difficult to get a reservation and even when you do, you typically will have to wait a little to be seated which is to be expected. After being seated, we started off with an assortment of breads, cured meat, and pickled cauliflower which were all delicious without being too filling. The service from the moment we sat down to the time we left was amazing. The maître d' provided some excellent recommendations and when we asked about the meatballs (that were noticeably absent from the menu) we were told that it would be no problem for us to order. We ended up ordering the meatballs, spicy rigatoni vodka, and veal parmesan with the tiramisu and lemon cheesecake for dessert. The meatballs were incredibly tender and flavorful, topped with a beautiful sauce that added depth without overpowering the meatballs themselves. The meatballs were a little red for my taste, but I embraced stepping outside of my comfort zone and thoroughly enjoyed them The Spicy Rigatoni Vodka was hands down the best I had ever had. The pasta was fresh and cooked perfectly al dente. The sauce was creamy, luxurious, and had a nice kick, but the spiciness added to the overall flavor as opposed to just "being spicy". It could be considered a "plain" dish at first glance, but the opulent mouth feel, texture, and taste resulted in a divine experience. I have had limited experience with eating veal, but we ordered the Veal Parmesan because Carbone was so well known for the dish. Since I love a good chicken parmesan, I was hoping that this entree would be right in my wheelhouse. As soon as I had the first bite I understood the hype. The veal was so incredibly tender it almost seemingly melted in my mouth. The breading to veal ratio was flawless and resulted in a perfect airy, elevated bite. In addition to the incredible taste, the portion size was very generous and was more than enough for me and my friend. Finally, for dessert we had a slice of tiramisu and a slice of the lemon cheesecake. As someone who loves coffee, I was quick to ask about the tiramisu and my interest was peaked when I was informed that it wasn't a traditional tiramisu. Orange liquor was used as opposed to the traditional expresso and the dessert was almost more like a hazelnut cake. It resulted in an absolutely breathtaking first bite of this tiramisu interpretation. Sometimes a more traditional tiramisu can result in a bite that is a bit too "wet". However, because of the use of orange liquor, every bite was perfectly balanced and had one of the most enjoyable aftertastes I've experienced in recent memory. I paired it with a cup of coffee and thoroughly enjoyed it. We were informed that the lemon cheesecake was their specialty so we had to get a slice of that as well. Once again, I was so pleasantly surprised with the refreshing take on a classic dessert. Instead of blending the lemon in the soft filling of the cheesecake and putting it in a graham cracker crust, this cheesecake had 3 distinct layers. The crust tasted like a powered sugar cookie, then there was the somewhat traditional soft filling, and on top of that was a thin layer of lemon. This nuanced approach allowed for a complete bite in which all three elements complimented each other rather than fighting for the spotlight. The acidity of the lemon topping was elegantly balanced with the base. As someone who is typically not a big fan of lemon desserts (which is why I chose the tiramisu), I was enthralled with this dessert. Overall, Carbone lived up to the hype. The food was elite cuisine, the service was incredible, the ambience was beautiful, and our overall experience was nothing short of magnificent. Will definitely be coming back on my next Vegas trip

Carbone met all our high expectations! This was a top notch dining experience for us. My bf made reservations weeks in advance and we were seated within 15 minutes. The vibes were amazing and we saw a lot of NBA players that night lol. Probably the best bread service out there! The cheese bread with the aged Parmesan and salami were impeccable. I ordered the famous spicy vodka rigatoni and it was perfectly aldente. Not too spicy. We finished our meal with the tiramisu with a flair of grand marnier. 5/5 stars for everything.
Ambiance is really simple for something in Vegas.
Food was solid, but not worth the price tag. We tried: Burrata - nicely chilled tomatoes and great flavor. Fresh juicy burrata Ceasar salad- the best I've ever had. The crispy bread croutons and the creamy sauce was so good. Bread bowl was also delicious. Veal parmagiana - tasty, but not worth $100 for a thin piece Rigatoni - forgettable Lobster ravioli- reminded me of dim sum Fried calamari- super tender on the inside and crispy on the outside. Meatballs - off menu and better than the veal. Clams 3 ways was one of the best things we ordered. Glad we went, but it really was not worth the price tag especially with the basic ambience.
WEDNESDAY DINNER: TAKING A RISK OUT OF YOUR COMFORT ZONE
Last year when I went to Las Vegas for five nights in July and August I ate great dinners overall. This year I went to Las Vegas for five nights in the second week of July. Prior to dining at Carbone my dinners so far have been underwhelming as the first two dinners were ok, but the third dinner was exceptional. I ate at Carbone on a Wednesday night prior to the Usher Concert. I've eaten numerous Italian restaurants in Italy and North Beach in San Francisco. They're a lot of dishes I'm familiar with. For my dinner at Carbone I was going to order items I've never had. That first item I had was a glass of red Cazaux from the Rhone Region in France. When I eat at Italian restaurants I order the Italian wines Chianti or Pinot Grigio. Ordering a French wine for my Italian dinner was out of the ordinary for me. Also I never drank a Cazaux before. The reason I ordered this wine was because when I tasted it had a smooth taste without the aftertaste. For pasta I ordered the orecchiette vito. I never ate orecchiette before. The server mentioned that this dish has broccoli rabe and sausage. Something new that sounds delicious I'll order it. The pasta was al dente as there was firmness to it. The combination of the bitter broccoli rabe and sweet sausage created a savory sauce. One of the best pasta dishes I ate at an Italian restaurant long time. The next dish I ordered wasn't necessarily what I consider Italian but American - pork ribs. From the outset the cherry pepper ribs were a man's meal - portions huge with the six bones. From the looks of the dish you would think they were beef ribs instead of pork ribs. The ribs were heavily sauced. Due to the peppers and jalapenos this dish appeared spicy but wasn't. These ribs took me a while to finish yet I didn't get meat sweats. Part of the reason why it took me a while was because of my weakness - warm bread. The compliment bread served at Carbone was warm in the middle with a slight buttery crust. Another compliment item that contributed me of having a hard time finishing the ribs was the spicy salami, which wasn't spicy but fills you up as the more you eat it due to the fat. Overall the cherry pepper ribs were tender. The sauce on the ribs wasn't BBQ but a sweet tasting sauce that brought pork flavor of the ribs. If you're craving for ribs at Las Vegas I recommend the cherry pepper ribs at Carbone. There's a saying "It's not for how you start but how you finish." That's how my dinners were in Las Vegas - started slowly in satisfaction but picked up steam. Sometimes when you order items you never had before they can end up as a disappointment. When you're going eat at Las Vegas for dinner you have "roll the dice" because the new dishes can be a delight satisfaction. From the glass of red Cazaux to the orecchiette vito and the cherry pepper ribs my dinner at Carbone was delizioso e magnifico.

This is our second visit and we had a fantastic dining experience from beginning to end, the Captain and his crew made sure we were attended to perfectly. The food was perfect too all the dishes came right on time and were prepared to perfection. The table side caesar is a great experience and they ask you how you like the anchovies with I thought was a great touch.

Wish I could give a ZERO rating. Our waiter Chris started out with a sassy comment, took our orders, poured our drinks, then poof was gone. We never saw him at our table again. Not to check on us, not to offer dessert, not to thank us for dinning there or even hope to see you again. Food was meh, Amalfi was better IMHO. I guess eating there is a shot in dark; like gambling, we lost a lot of money. The only exciting thing was eating there on Jin's discharge day at a restaurant they at during their Las Vegas concert (BTS).
Never again, this place was not good for us for multiple reasons.
Service was terrible, our waitress changed our tip amount on the bill for herself. Don't trust this place. Our food was ok. We liked the bread, but nothing else was stand out in any way. I would never return here because of our experience. We didn't realize it until we returned home and I looked over our statement from the hotel, because we charged the meal to our room.
Worth the Hype? Not in Our Opinion.
We really wanted to love Carbone as it came so highly recommended. I can only say that our experience was very hit or miss, with more misses than hits. Since it's a rather expensive place for Italian, just wanted to share some insights. The hits: - Really lovely, charming environment that is impeccably clean and tastefully designed - Our servers/waitstaff were attentive, polite, and true professionals. - The veal marsala was definitely the best dish on our table, followed closely by the lamb chops. - When I posted this similar review to the restaurant's booking engine (Seven Rooms), I was immediately contacted by the GM, Jonathan, who was authentic in his apology and offer to make things right on a future visit. The misses: (Sigh) - just about everything else was "meh" at best. 1. The music in the private dining room was LOUD - like to the point you can't hear the server give specials or have conversation across the table. We did ask if it could be lowered, and were told that it's the same as the rest of the restaurant and only a small adjustment could be made. This was a real challenge for a party of 9 people. So, if you're with a large group - perhaps skip the private dining room. I cannot say if the main dining area would have been better. 2. The menu is not designed to give you even the slightest hint of what you're about to order. You either know, or you don't. Not a big deal on things like Veal Marsala or Eggplant Parmesan... but not great when you have other listings like "Branzino" (cooked how?) or Orechiette Vito (a signature Carbone item apparently, featuring Broccoli Rabe and Wild Boar sausage) - but you'll only know that if you ask your server (assuming you can hear them). Some simple ingredients listings would not be out of the question. 3. Value Being from Miami, we're not unfamiliar with "resort" pricing. What we do expect in return is a level of quality/execution that reflects that price. -- My niece's Linguine Vongole had about 3-4 total clams (which were small)... doesn't seem like a $41 dish. By comparison, the Fisherman's Stew at Nomad Library is LOADED with big pieces of seafood for $55... a much better/more satisfying choice. -- Lobster Ravioli is really more like a $52 ravioli served in a chunky lobster sauce as opposed to a nice succulent lobster filling. For about $55 you can go to Lago at The Bellagio and get either their Lobster Scampi or when it's offered on special, the Lobster Ravioli and get a lot more out of the dish. But let me be clear - this isn't just about portion sizes, it's about execution. I'll happily take a small dish that's inventive and flawlessly prepared and be willing to pay a premium for that. The Day Boat Scallops or Fois Gras Ravioli at Scarpetta are not a huge dish, but each one of those scallops and raviolis absolutely sings. At Carbone, I had Chicken Scarpariello (a spin on cacciatore) and my giant half-chicken dish drenched in sauce and sausage gave me only a hint of flavor and dry chicken. I'd have preferred a dish a third that size executed with precision. By the time we got to dessert, we really weren't interested in more disappointment. Maybe the original NYC version is better. Maybe you have this place on your bucket list for some reason. Maybe you don't want something that approaches "upscale" Italian. Those are all valid considerations to drop some serious $$$ on Carbone. My advice: Go 20 steps across the hall to Bardot, or any of the other establishments mentioned above. I'd venture to say you'll be a lot more pleased with the result.
Worst ribeye ever!
Service was good, so was the bread and the Caesar salad. Pasta dish was good, but very small. Ribeye steak was awful and more like a Korean BBQ than a steak. It honestly was the worst steak I have ever had. The staff never asked once if everything was ok?
Rude Staff!! Avoid this Carbone LOCATION!
I will start by saying we frequent Carbone in NY and Miami and have become accustomed to their excellent service and hospitality. Unfortunately, their Vegas location was extremely disappointing and fell short. Our reservation was for 945, which we were early for. We were seated at least 15 min after 9:45. While we were waiting on our reservation we thought we would have a cocktail at the bar. To our dismay, we were approached by an extremely rude bartender letting us know in a condescending, aggressive manner we cannot sit there. Instead of giving another option he rudely dismissed us. I asked to talk to a manager but in return he surprisingly listened to our complaint and said a quick apology and walked off. He could not have cared less. It seemed as though he was new and had not been trained properly. I wanted to leave but we were starving. After ordering a caesar salad the table was left there a full five minutes without table side service. When the SA got to the table to make the Caesar salad he was completely mute, not saying a word to us.. not even a "hello". It seemed as though there were not enough SA's and maybe the server was too busy. For the price I was extremely shocked at the service towards guests and careless attitudes. We will never come back to this location again. Terrible mistake. AVOID this Carbone location !!!! This is not an accurate representation of the Brand. Extremely disappointed.
When in Vegas…
I was able to get a late night reservation on a Friday night. It was packed as expected but the service and food were worth it. The price point was fair. I had the Spicy Rigatoni Vodka and Caesar Salad. Nothing fancy but just good, solid food! If reservations were easier to get, I can see myself coming more often.

Had a reservation for 7:45, and did not get seated until after 8:30 while people with reservations after us were seated first. The table was tiny and I couldn't sit across from my wife, I had to sit kitty-corner because it was a fire risk to have a chair at this table due to how crowded it was. I asked to move to a different table so we could look at each other and talk more easily while we ate and was told no and treated with disrespect... Until we ordered a bottle of wine and then they allowed us to switch tables. Overall, the restaurant seemed like a big exclusivity club and they only prioritize trying to upsell you. And the sad part is the food was good. But I'm not spending 500$ on a dinner to wait around, get treated poorly, and get crammed into a tiny table in the corner.

I was just in Italy and this place definitely didn't do Italian Food any justice. Over the top expensive for nothing other than saying you're expensive. The Veal Parmigiana was decent but the Lobster Ravoli was bland as hell. The artichokes were gross, the bread was just ok. The Caesar Salad was good. The homemade croutons were good. The oysters were good. $550 bucks for three dudes to eat. All three dinner plates were only half eaten and most of that was moved around by picking at it. One of the guys in our party is a big time foodie and he was so disappointed. Carmines in Caesar's is more an half the price and much better. I guess if a business starts a rumor that it's really hard to get into for dinner, people start to feel like it's a must-have place. This is not.

If you have the opportunity to eat at Carbones, you should definitely try it. The ambience is spectacular. A little bit dark. The service is fabulous. I would recommend the spicy rigatoni and the Veal Parmesan. The desserts were also incredible. Pass on the tiramisu though.

Really enjoyed the accoutrements in the beginning - the bread, cheese, meats, and pickles were delicious. Pasta dishes were perfectly al dented and seasoned perfectly. I get the spicy rigatoni hype now.

We came here for a second late night dinner, and it was definitely worth it and worth the hype! Since we had already eaten, we got the essentials starting with a bottle of Italian red. I loved all the different bread options with salami and picked cauliflower served too. The spicy vodka rigatoni was amazing, perfectly Al dente, with a nice kick and delicious flavor. We honestly didn't need the meatballs on the side but I'm glad I tried them. Would probably skip this next time. The ceasar salad made table side also had a nice spice and one of the best I've had. We couldn't leave without dessert especially after seeing the beautiful dessert cart! The chocolate hazelnut cake (similar to ferrero rocher) and cheesecake were delicious. These were also recommended over the tiramisu. I would love to come back and try some other dishes or visit the other locations after finally getting a taste of the classics! Such a great ambiance, food, and service overall!

Came here after my elopement and felt the VIP experience immediately. Hands down the best Italian food I've ever had in the most upscale atmosphere I've ever been in. White glove service, a sommelier to assist, and just enough attention that your needs are anticipated but you aren't bothered either. Very romantic sitting in the private circular booth with my husband. The squid ink ravioli was absolute heaven, the charcuterie board was thoughtfully put together with top tier ingredients, and the champagne recommended by the som was truly memorable. I can't wait to return for our first anniversary.
Carbone has once again proven to be a complete
Carbone has once again proven to be a complete disappointment. Despite making a reservation a month in advance and planning our evening meticulously, they callously canceled our reservation because we were stuck in traffic. It's as if they have no understanding of the realities of city life or basic empathy for their customers. To make matters worse, the staff's behavior was nothing short of abhorrent. Instead of showing even a modicum of understanding, they were rude, unprofessional, and downright mean. It's baffling how a restaurant can survive with such a toxic attitude towards their patrons. This isn't the first time Carbone has let us down, but it will certainly be the last. Save yourself the headache and avoid this establishment at all costs. There are plenty of other restaurants in the city that actually value their customers.
