Terrible people making decent cocktails.
Don't make the mistake of coming here. Yes, the cocktails are good. But the staff are hostile. It doesn't matter what your politics are - they resent that you bothered them. There are better cocktails and nicer places nearby. Don't encourage these dicks.

Parking is very easy on weekdays (except Friday), especially after 9 pm but it can get packed during weekends. Price came out to be around $100 for four drinks, it's on the pricier side but the presentation and concepts are good. We got the lawn boy, Shaballah, campfire in Georgia, and Snow White's bong. I'd recommend the first two for people who enjoy sweet drinks and the latter two for people who want something different. They have almost 5,000 labels in house so if you're a spirit enthusiast, this is the place for you. Great place to take a date after dinner but service can take a little long depending on how busy they are.

The quality of their staff has gone down over the many years I've been visiting Canon, with a lot of turnover that impacts the customer experience. I previously reviewed ownership issues, but Yelp doesn't let you comment on that so I'll just focus on the frontline staff and the drinks themselves. Their bartenders really shy away from cocktail requests that aren't in their standard/everyday printed out menu (unlike a few years ago when they were better trained/more experienced). And their drink prices have gone up disproportionately.

Loved the vibes!! The shelves of alcohol could literally be a liquor library. For a Monday evening, the place was packed but still super cozy. We ordered Lawn Boy and Groot Beer Float -- I personally enjoyed the sweet fruitiness of Lawn Boy, but my friend didn't particularly like her beer float. Lawn Boy was very visually appealing too: it came in a bathtub with rose petals and ice bits that looked like a bubble bath.

Everyone seems happy to be here. Creative/innovated cocktails. Customer service was great despite how busy it was, that's what gives this place an extra star. Cons: Cocktails are pricey and taste is not great. I had the groot beer float which was very bitter. Was not impressed considering how pricey each cocktail is. Can get pretty crowded and have a wait time to ge Overall it was a decent experience, but not mesmerizing to the point where I'll come back again.

OH MY GOSH!! This is the best cocktail bar I've ever been too. The interior is beautiful! The selection was insane. You can get pretty much any type of liquor you can imagine. The cocktails are creative and so flavorful. I honestly don't even know how you would make some of them. The mushroom cocktail was my favorite drink I've ever had. It was sweet and savory and umami. I'm not even much of a cocktail person but this was next level.

The drinks were all really good and I had no complaints or critiques whatsoever. We would probably give the food a try next time and have some snacks. The drink menu is very unique too so there's something for everyone - including non-alcoholic/NA drinks. The servers were attentive and helpful. They had great recommendations as well. We walked up around 7ish on a Saturday for 2 and only had to wait about 20 minutes or so. We were at the standing bar table first until a table opened which was fine with us. It's a pretty cool space, though it's very small and cozy. The sheer number of bottles everywhere is kind of mind blowing. It's lively and fun as a date night spot or a group spot. That said, it is on the pricier end of drink spots ($22 average per cocktail) . I just felt the quality was good enough that I didn't mind the price tag. TLDR: would definitely go back for the unique drinks and snacks and be prepared for the price tag.

This was the highlight of my weekend in Seattle.
The choices were off the charts! The appetizers we had were delicious in between the various drinks we ordered. 2 whiskeys and 3 cocktails - all so good. The staff was attentive and knowledgeable. The atmosphere is classic! Wall to wall to the ceiling and rafters of bottles of whiskey and other offerings. Make a reservation it's so worth it! I'm glad ours was late as we didn't have to leave after an hour.

Not often do you find bars that make creative cocktails that also taste amazing! Canon does just that and has easily become one of my favorites in Seattle. It's a great sit down bar with an impressive selection of drinks. We ordered the Lawn Boy and Whole Paycheck. I personally loved the Lawn Boy, which was on the more sweet/fruitier side and comes in a small bathtub with rose petals. The drinks are definitely on the pricier side, but are worth it for the experience. Will be visiting again!

Leftist politicking but fabulous cocktails
The owners likely don't want your business if you're conservative (even as a liberal, I find their overt leftist politicking to be offensive), and they're pretty aggressive and lacking in humility and self-awareness when customers complain (you can get a small sense of this by looking at their responses to negative reviews on this and other platforms). But that having been said, they have without a doubt one of the best whiskey and cocktail bars in the city. So reviewing Canon is difficult and raises questions similar to whether to "like" Michael Jackson or R.Kelly music despite their being gross people. Can you separate the person from the art? I've been a customer of Canon for years. I've probably spent a few thousand dollars there over many visits, and I even own their cocktail book. The design of the bar is exquisite, with lovely dark wood, great lighting, and fantastically creative and lovely glassware and other bar trinkets. I can't express enough how lovely it is to sit in this bar (the front is better than the now expanded backroom, although it's great that it's now much easier to get a seat). Their whiskey catalog is literally worldclass, as is their range of available cocktails (they have a regular cocktail menu but you can order off menu, including ones from their book). Their food menu is also quite nice and similarly upscale. Their bartender quality slipped for a while but I think it's back on the upswing. I've heard (secondhand from other bartenders in the city, so possibly wrong) that they don't treat their staff that great, and they have had a bit of turnover. A few visits ago one of their waitresses tried to tell me their 12 yr old bottle of Redbreast was like a 15 yr old bottle because they'd owned it for 3 years (no - whiskey doesn't age like wine). My favorite bartender in the city used to work at Canon. I remember one fabulous night he was playing Fugazi over the sound system, which when juxtaposed with top notch cocktails was pretty much heaven for me. My last few visits the bartenders have been better. Their online postings can be obsessed with the latest far left causes. Again, I'm liberal, but if I was conservative I'd definitely not feel welcome. They're upfront in saying on social media that they want to use their business as a megaphone for their personal politics, which of course insults a good portion of their clientele. They said they were leaving Twitter (due to new free speech allowances by Elon that upsets their echo chamber), but they didn't follow through. I think the owner's wife was previously in control of their social media, a know-nothing riding the coattails of her husband, but I get a sense that someone else is now in control of the social media as its been dramatically better with the focus back on lovely pictures of new menu items and cocktails. Ultimately, I put the cocktail experience above all else and ignore the personal issues with Canon's ownership. The cocktail experience there is simply wonderful. A great place to treat yourself, or to show off to out of town guests.
